colombia-finca-nogales
Colombia - Finca Nogales

Hello!

This time, we are back with Neem Coffee's FIRST DECAF coffee on our menu!

This coffee came up on our cupping table through importer Apex Coffee Imports. We had many different stunning coffees on the table, but when we found out this typica was decaf, April and Paul were both surprised.

It was like decaf we've never had before. To begin with, it was really sweet, like REALLY SWEET. On top of that, tropical notes like kiwi, pineapple that were present throughout cupping definitely got us excited.
As cools down it reminded us red starburst or gummies like flavor, somewhat artificial cherries.

We've been looking for a chance to showcase our first decaf and we thought this would be the great representation of what gets us exciting.

This won't be our last decaf option for sure, and we're on the lookout for something that's more price-friendly and approachable.

We hope this can make your cup of evening coffee more exciting.

*Additional note about how this coffee was decaffeinated.
Usually, there are two main different ways of decaffeination; Swiss water decaf and EA (Ethyl Acetate) process.
Both uses Green Coffee Extract (GCE) or Ethyl Acetate from sugar cane to extract caffeine from green coffee.
In this case, its own mucilage, must, is used to extract caffeine from green coffee.
Coffees go through somewhat traditional processing from sorting to drying.
Once it is dried, it goes into hot water for several hours twice to open up the cells and prepared for the decaffeination process. Once it's ready, natural solvent, or must, derived from coffee pulp or husk, is then added, and left for 24hrs to assist caffein removal.

Hope you enjoy!

We highly recommend resting it for at least two weeks.

Our brew guide will be up on Instagram(@neemcoffeeproject) soon, so be sure to check it out!

Information

Producer : Hernández family

Processing : Decaf with must

Variety : Typica

Region : Huila

Country : Colombia

Importing partner : Apex Coffee Imports
