Hello all!
Our new coffee is a washed Gesha from Huila, Colombia, produced by Victor Bermudez.
This coffee has both floral and fruity qualities. When it’s hot, you’ll notice gentle citrus notes, something like tangerine. As it cools down, blueberry aromas and sweetness become more pronounced.
We also tried it as a cold brew, and the aroma stayed really vibrant, which made it very enjoyable to drink all the way to the end.
For more information from the production side:
For this gesha lot, cherries are handpicked over three days and combined across fermentation stages before flotation and depulping. The coffee ferments submerged in water in sealed containers for three days, is washed twice, and dried slowly for 15–20 days.
Victor continuously adjusts fermentation based on variety, keeping it shorter for gesha to preserve floral complexity, while extending it for other cultivars to enhance sweetness, using pH monitoring to maintain consistency.
Hope you enjoy!
We highly recommend resting it for at least two weeks.
Our brew guide will be up on Instagram(@neemcoffeeproject) soon, so be sure to check it out!
